Grass Fed Beef

Stealing the Scene-Cattle in Landscape
Originally uploaded by julieabrown1
After learning about the health benefits for both cattle and consumers, I purchased some hamburger made from grass fed beef this weekend at Trader Joe's.
It was delicious.
Pricey? Yes. Worth it? Absolutely.

Lentils
I love my Zojirushi Rice Cooker and today I used it to cook lentils. I just put one cup dried lentils, 1/4 teaspoon salt, and 2 cups water into the rice cooker, and one hour later I had lentils ready to eat or add to soup or sprinkle on salads.
Lentils are one of my favorite legumes and are very high in fiber, as well as lots of other good things.

Quest for Chocolate
Ever have a day when the only thing you can possibly eke out the energy to do is to eat chocolate? I am having such a day. Fortunately, I made some chocolate fudge sauce last night and as soon as I finish this post I am going to eat the leftovers with a wooden spoon, straight out of the saucepan.
Chocolate Fudge Sauce
In a small saucepan mix
1/3 cup unsweetened cocoa powder with
1/3 cup sugar. Slowly stir in
1/3 cup water.
Cook, stirring constantly, until the mixture boils. Continue stirring and cooking for one minute. Remove from heat.
You can serve this hot over ice cream. You can add milk to the leftovers in the saucepan the next day and heat over low heat and drink it up that way. In a chocolate emergency, you can, of course, eat it with a spoon of your liking straight from the pan.
Bye. I need to get down to my kitchen now.

Celene's Simple Fudge
Here is a deliciously simple fudge recipe shared by the wife of my cousin. Once I had tasted it, I lamented the countless hours I had spent as a teen in my Mom's kitchen, trying to bring a mixture of cocoa, sugar, and milk to a perfect "soft ball stage, " as directed by the recipe on the side of the cocoa can. I think that this version of the best-of-confections tastes just the same. And it is sooooo much easier.
Celene's Microwave Fudge
Melt a stick of butter in a microwavable dish.
Add to the butter:
1/2 cup cocoa powder
1 box (1 lb) powdered sugar
1/4 cup milk
Stir until mixed well.
Cook the mixture in the microwave for two minutes on high.
Add vanilla, stirring until the fudge is no longer lumpy.
Pour into a buttered 9x9 pan.
Cool.
(Oh, yeah. It is very cool.)

Simple Popcorn
You don't need to buy microwave popcorn. Simply pour 1/4 cup of popcorn kernels into a paper lunch bag. Fold the top over several times. Place the bag in the microwave and push the popcorn button.
I like mine with canola oil and a little salt.
Yum.
